(From what I understand, white sweet potatoes are slightly less sweet than their orange counterparts so feel free to add a little more honey to taste if you think it’s necessary.) Enjoy! May reduce the amount of broth by a couple cups to make a little thicker…what I love is how versatile this is, a tweak here or there for personal preferences won’t hurt this recipe at all. For those asking about Instant Pot- I made mine in one and just added all the ingredients and cooked on high pressure for 20 minutes. My mother is not a fan of curry and since I was taking some to her I chose to substitute but I have no doubt the curry would be wonderful too. Delicious!!! It definitely needed honey so I added that and the soup was a nice change from the regular pumpkin soup I always make!
